... generate a list of tables with individual fields in each table.

You can expand the needed database in Database Explorer select multiple tables, right-click the selection and choose 'Generate Script As' from the popup menu.

Also, you can right-click the whole database, select 'Backup and Restore -> Backup Database...' from the popup menu and complete the wizard.
